The bajan cuisine, is a fusion of Caribbean, African, West Indian and European delights, brought together to create a festival for your taste buds. Fish is most commonly used in Barbadian cooking; this is because of the surrounding waters which provide the best variety of fish delicacies such as tuna, shark, salmon, cod, red snapper, king fish, crab, lobster, shrimp and sea urchins,  but the flying fish is a national symbol of Barbados, is what mostly graces tables.


The national dish of Barbados is cou cou (shown in the picture), it consists of okra, cornmeal and flying fish. Other common things found in Bajan cuisine are rice and peas, pudding and souse, macaroni pie and tropical fruits. All Bajan dishes are infused with herbs and spices to create an authentic Bajan flavor.
